SPICY RED MEXICAN RICE from INDIANKITCHENPAKSHALA

This is one of the most popular dishes from Mexico,known  as Arroz a la Mexikana (Mexican Red rice).world loves this dish due to its taste and simple cooking.

Main Ingredients

Dish for 4 persons


4 Cups of boiled rice(Each cup is of 250 grams capacity) 
1 full big bunch of coriander leaves(Chopped)
3 Tbsp any edible Oil
3 tomatoes -ground to pure in mixer/blender
1 big tomato -cut into medium pieces
1 tsp of Ajwain ( carom seeds,voma/Vamu in telugu)
3 medium size onions -finely chopped 
3 tsps Tomato Ketch Up
1 1/2 Tsp Salt (or as per your Taste) 
1Tsp Red chili Powder
1 Tsp freshly Ground black pepper (mirium in Telugu)
1 table semi(75% done) boiled  spoon green peas (optional)


Method 


1.Heat edible oil in Kadhai(Wok or baandi in telugu) keep the flame to low,Add Ajwain.Stir fry for 2 minutes

2.Add Onions and Stir fry till light brown

3.Add Tomato puree,Cook till dry and oil releases out

4.Reduce the Flame Add Tomato Sauce.Red chili powder,Salt and Pepper powder

5.Add the boiled rice ,Stir fry for 2-3 minutes on high flame

6.Add Chopped coriander leaves ,Mix well and Serve Hot with Green Chili sauce
