KACHORI (Indian pastry and Flaky) From Indian Kitchen -Paka Shala)


Kachori or Kachauri or Kachodi or Katchuri is a spicy snack popular in various parts of India including West,North and East India, made up of whole wheat flour, mashed green peas,Spices and spice powders.

Main Ingredients

1 cup whole Wheat Flour or all purpose flour (Maida)

1 table spoon of edible oil 

1/4 th table spoon of Ghee

1/4 th T sp of Cooking Soda/Sodium Bicorbonate/Baking Soda

1/4 th t sp of salt

1/4 th cup of zeera (optional)

Ingredients for filling

2 cups Grean peas   

1" inch size  ginger piece

2 green chilies 

3 table spoons edible oil

1/4 cup warm water

Spices and powders

1/4 Tsp   Cumin seeds(Zeera)

1/4 Tsp   Red Chilli powder  

1/2 Tsp    Coriander powder(Dhania Powder)

1/4 Tsp   Cumin Powder    (Zeera Powder)

1/2 Tsp   Garam Masala

1/4  Tsp  Chat Masala

1/4  Tsp  Amchoor (Dry Mango Powder)

1/4  Tsp turmeric

1      Table spoon of Gram Flour or Corn Flour

1/4   Tsp of Salt or as per your taste


 Preparing the Top Layer (patti)

1.Sieve the Wheat flour (or all purpose floor )and add edible oil,Salt,,Cooking Soda and Zeera .Mix the flour thoroughly with hand
2.Now add warm water slowly and make the flour into dough (tough).Cover with damp cloth or poly polypropylene sheet and set aside for 30-45 minutes

Preparing Green chili and Ginger Paste

Mince Green chili and Ginger,Salt in a blender and keep it aside

Preparing the Filling

1.Boil the green peas in pressure cooker (one vigil will be sufficient) and mash them to make semi Coarsely or Coarsely

2.Place the kadai on stove in low flame

3.Add Edible oil to the kadai

4.Add Cumin Seeds to oil after spluttering 

5.Add  Ginger Green chilies paste to oil,cook for 2-3 minutes

6.Add Mashed Green Peas to the pan (now turn the flame to medium)

7)Add Red Chili powder,Turmeric,Coriander powder,Cumin Powder ,Chat masala,Amchoor powder    and garam masala and Salt to the Pan

8) stir and saute for 3 minutes,now add gram flour (Besan) or Corn flour (this will be Binding agent)
    to the Pan 
9)Cook for 5 minutes,Check salt and Spice powders,add salt if required,Switch of the flame

Making of Kachori

Prepare 5-6 equal size balls of the dough

Make the dough into 4 inches round on a flour sprinkled belan (rolling pin)

Add the stuffing into the center of the round (Chapathi like patti)

wet the edges of the patti (Pastry)with Water

Bring together all edges of the Patti(pastry and Pinch them and press the edges to down side below

Prepare all kachories like this and cover with cloth and set aside under wet cloth

Now place kadai on Stove ,Add 2-3 cups of edible oil for deep frying

Now after attaining required temperature,slowly drom the kachori one after another
Deep Fry on Medium heat till kachories attain golden brown color 

Remove the fried kachories from Flame and Serve hot with Tangy tomato chutney or green chutney
