UNDRALLU/KUDUMULU
Undrallu are steamed rice balls made of rice ravva (cracked rice), split chickpeas, and a pinch of salt. Cumin seed optional. Cook 1 cup ravva and 1/4 cup split chickpeas in 2 cups water with salt and cumin seed for a few minutes. Let cool enough to form into balls and steam the balls for 10-15 minutes.
Ingredients
- 1 cup of rice flour or rice rava (check here to read foot note 2 how to make your flour or rava), you can also use store bought flour
- 1½ to 2 cups water depending on the rice rava, (1½ cups if using store bought flour)
- Fistful of channa dal / senaga pappu
- ½ tsp. roasted cumin (optional)
- Salt to taste
- 1 tsp. ghee
Instructions
- Soak dal for at least ½ Hour
- Add water to a heavy bottom pot and bring it to a boil, Add ghee, salt and (cumin if you like)
- Add dal and stir
- Pour rava to the boiling water slowly in a stream, mixing well with another hand to prevent lumps.
- Cook till the water fully evaporates. keep stirring to prevent burning
- Cover the pot with a lid and simmer the stove for just 2 minutes. take care not toburn
- Leave it covered for about 15 minutes
- Transfer this to a wide plate and cool
- Grease your palms and knead it well for a min or two.
- Bring water to a boil in a pressure cooker, moisten your palms ,make balls with the dough and Arrange them in a wide plate or Dish
- When the water begins to boil, steam the dough balls(undallu) for 6 to 10 minutes on a high flame. If using a large pressure cooker steam for 10 minutes, a small pressure pan will need only 6 minutes
Notes
You can use store bought flour to make kudumulu, but they don't turn out very tasty

2 After the water is drained completely, transfer the rice to a dry clean cloth.
3. Spread it evenly and fan dry for about 2 hrs or sun dry till they dry completely
4.Now Blend the rice in blender/Mixi to coarse Flour (donot make it fine powder then the undallu will not come good.

you can use Idli cooker and its plates to steam the dough balls (undrallu) instead of Pressure cooker and large plate/dish
