GOBI FRY/CAULIFLOWER 65 is every ones favorite,kids too love to have this as snack item/starter or in main course in plain rice,Pretty simple dish and easy to cook also.only caution we have to take is we have to be at the stove through the process else the dish will be over fried.Best item for Kitty parties and together
Ingredients:
Cauliflower / Gobi – 1 large cut into bite size florets
Turmeric powder – 1 tsp
Salt to taste
For Marination:
Besan (Gram Flour) – 1 cup (Some may use corn flour also but I prefer Besan in Restaurant)
Rice Flour 1/2 Cup
Coriander powder / Dhania Powder – 1 tblspn
Zeera (Cumin)Powder 1/2 Tblspn
Ginger-Garlic Paste 2 Table spoons (or as per your taste)
Chili powder – 2 tsp
Green Chilies - Cut slit in to two 5-6 pcs
Curry leaves - 1 spring
Salt to taste
Permited Food Colour (optional)
Method:
Heat water, salt and turmeric in a sauce pan. Bring it to boil. Add cauliflower in it and cook till tender. Drain and allow it to cool down. Transfer it to a bowl. Do not boil for longer time as this will make Gobi too soft and tender,just for 4-5 minutes only
(In Restaurants,We directly fry the Cauliflower Florets as we cook an very high temperature Oil)
Add all the ingredients given for marination in that and mix well. Add a splash of water if needed.Fry in Medium Heat
Drop it in hot oil and fry till golden brown.
Lastly Fry curry leaves and Chili pieces and garnish the dish
Drain and serve.
