Kadai Chicken: A Classic Punjabi Dish

- 2-3 tbsp oil

- 1 tsp coriander seeds
- 1 tsp garam masala
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tbsp Kasur Methi (dried fenugreek leaves)
- Salt to taste
- Fresh coriander leaves for garnishing
Instructions:
- Heat some oil in a Kadai (wok) or a deep pan. Add cumin seeds and coriander seeds and let them sizzle.
- Add the finely chopped onion and sauté until it turns golden brown.
- Add ginger-garlic paste and sauté for 1-2 minutes.
- Add diced capsicum and sauté for another 2-3 minutes.
- Add finely chopped tomatoes and slit green chilies and sauté until they turn soft and mushy.
- Add all the spices - garam masala, turmeric powder, red chili powder, and kasuri Methi. Mix well and sauté for 1-2 minutes.
- Add the boneless chicken and salt to taste. Mix well and cook for 5-7 minutes or until the chicken is almost cooked.
- Cover the pan and cook on low flame for another 10-15 minutes or until the chicken is fully cooked and the sauce has thickened.
- Garnish with fresh coriander leaves and serve hot with rice or naan.
Tips:
- If you prefer chicken with bones, you can use it too, but make sure to increase the cooking time accordingly.
- If you like your kadai chicken spicier, you can add more red chili powder or green chilies.
- For a creamier sauce, you can also add some cream or yogurt.
