whole wheat cookies are light and crispy.Very healthy dish for all generations , They are great with tea or coffee.This is an egg-less cookie recipe
Main Ingredients
Whole Wheat flour (Atta) - ½ Cup
(+Few tablespoons for sprinkling while rolling dough)
Baking Powder - ½ Tsp
Salt - 1/2 Tsp (as per taste)
Sugar (powdered) - ¼ Cup
Ghee - ¼ Cup (Kept in Freezer for 15 mins) alternatively you can use Dalda(Vegetable Ghee)Margarine,Frozen butter
Milk - 2 Tbsp
Salt - 2 Cups (For Baking in pressure cooker)
Lime Juice/Vinegar 1/2 spoon
Method
In a bowl, mix Wheat flour, baking powder, salt, sugar, Lime Juice ,Now break the cold ghee into small pieces and whisk that in the wheat flour. Make sure the ghee/Butter is very cold and is solidified.
Now put dough this in the freezer for 10 mins
Cover and remove whistle(if using pressure cooker) or loosen whistle(if using idli cooker).
Now heat the cooker in med flame, so that while we're ready with the biscuits, the cooker will also be preheated and ready.Once the dough is cold, sprinkle some atta in a rolling board/working platform. Now shape the dough and make it smooth.
Roll it gently to about 2 cms or as your preference. Traditional ones are very thin like 1 cm.. Now cut the biscuits using a knife or a cookie cutter..(you can use lid of any bottle also,if cookie cutter is not available with you) Use your imagination and creativity here too

Grease a plate or a cake tin or cooker dish with some ghee
Place the cookies.(or in aluminium cooker dish)
Transfer the cake tin to the cooker and bake the cookies for 10 mins in low-med flame
Now close the Lid and turn the flame to Medium
Keep an eye, some stoves med flame might not be same for alll stoves.. Cookies can burn in a matter of few seconds. Keep checking cookies after 7-8 mins.
Once the cookies are baked, let them cool and then munch in!
Notes
Want to bake the cookies in a regular electric oven?
Grease the Baking Tray,Place the egg less cookies in tray
Keep the Tray in side the Pre Heated Oven Bake at 180 C for 10 mins in a preheated oven
2)You can add chocolate chips,Coco powder ,or coconut powder or oats,raisins,almonds,nuts,cherries ,choice is yours ....
3)Salt used in side the Pressure cooker can be used multiple times for further baking,so after it gets cool,Please store in a jar and Re use it.
4)Salt is used in side the pressure cooker to avoid over burning of cooker bottom,Salt will act as preventive agent for blackening of cooker bottom and interior side of Cooker
